Banana Scones Recipe

My children love bananas and either we have too little or too much. When I have to much and the bananas are rip with brown spots and the kids don’t want to eat them any more I make banana scone, bread, wheaten, muffins eg. This is the recipe I use for banana scones.

Ingredients

  • 375g/13oz self-raising flour
  • 1 tablespoon caster sugar
  • 80g/3oz butter
  • 250ml milk
  • 2 bananas
  • self-raising flour, for dusting

Method

  1. Preheat the oven to 220 C / Gas 7.
  2. Dust a baking tray with self-raising flour.
  3. Sieve flour into medium mixing bowl.
  4. Add caster sugar. Using your fingertips, rub butter into the mixture until it resembles fine breadcrumbs.
  5. Add milk.  Mix until dough begins to come together.
  6. flour a work surface and turn out mixture.
  7. Knead gently until dough comes together.
  8. Flatten dough with palm of your hand until about 2cm thick.
  9. You can either use a 5cm round cutter, a drinking glass to cut out your scones or just slice into sections with a flour dusted knife and shape with you hands.
  10. Place onto the prepared baking tray 1cm apart.
  11. Brush with leftover milk.
  12. Bake in the preheated oven for 14-16 minutes or until golden and cooked through.
  13. Last the tasty part. Serve with jam and cream or whatever takes your fancy.
